Obesity and Food Affordability: The Influence of Addictive Processed Foods in Hispanic Young Adults

Abstract
Obesity is a significant public health issue disproportionately affecting Hispanic young adults, with long-term consequences such as type 2 diabetes, cardiovascular disease, and certain cancers. This literature review explores the interplay of food affordability, highly processed foods, and cultural influences contributing to obesity in this population. Key drivers include limited access to nutritious, affordable food in low-income communities, exposure to food deserts, and acculturation-related shifts toward processed and fast foods. The incentive sensitization theory highlights the role of craving, rather than enjoyment, in compulsive consumption of highly processed foods, exacerbating obesity risk. Socioeconomic challenges, food insecurity, and adverse childhood experiences further compound these issues. Culturally tailored interventions, community-driven initiatives, and public policies aimed at improving food accessibility and reducing unhealthy food marketing are critical. Future research should investigate the long-term effects of processed food consumption and develop culturally specific strategies to reduce health disparities among Hispanic young adults.
